Eggplant Lasagne

1 medium eggplant
1or 2 diced red bell pepper
2 beefstake tomatoes
5 Eggwhites
2 cups mozzarella cheese
1 clove garlic
1 yellow or green zucchini

Slice the eggplant longways (you can leave the skin on or off)
Place in casserole dish sprayed with any non-stock cooking spray
