You can lighten this recipe up by using non-fat parm but I love it this way and it still is a reasonable calorie count. The quinoa makes this pilaf extra nutritional. One of my family's favorite sides. Could also be a good main meal by adding cubed chicken breast or just leave vegetarian (use vegetable stock instead of chicken). Sometimes I add a different variety of veggies like green beans.

With just a few ingredients, this is simple to make. Yet its versatile enough to adapt. As made, its low sodium and low fat, and high in protein and vitamins. I bought all of the ingredients at Trader Joe's, but I am sure you can find them at the regular grocery store.

Adapted from a Rachel Ray recipe. Hers was made with chicken legs - roasted with the skin on. This one uses skinless/boneless chicken breast so you can cook it all on your cooktop instead of the oven - and I use less olive oil.
I used Isreali Couscous (I don't know if there is a difference) - it was the first time my family tried Couscous and they all loved it!
