Cookbook creator says: this recipe is 8 portions, but if I double it, the carbohydrates will be half of amount listed, less fiber. It sounds so good. I will also try with same amount of sweet potatoes and see what it is like.

Cookbook creator says: I will substitute amaranth flour and change veggies and try with fruit, both fresh and dried. If fruit is added, I will add cinnamon and a pinch of ground cloves. If I want to eat two and know it, I will double the portions of the recipe.

Cookbook creator says: I would eliminate approximately 10g carbohydrate by rolling in endive leaf, instead of tortilla (also eliminates 50 calories) and I would half this and make only one serving. I may also consider changing sausage to, shredded (pulled) turkey or/and chicken, would be less fat and healthier.
