This is so simple and seriously yummy. This recipe will yield enough as a topping for Mousakka to serve 6 people. I've also had it in a sandwich with seitan slices and drizzled it over a pizza too.

You can add basil, oregano, course ground black pepper and substitute red wine vinegar for an herbed version found in delis but for desserts and original Greek dishes the feta should be the original version, dry and salty without herbal overtones.

My favorite dairy-free, protein-rich sauce! I use it for nachos, macaroni and "cheese", anything that requires a cheesy sauce. Don't let the yeast part daunt you -- it tastes awesome!
