Olive Garden's Soup or Zuppa, this is my low sodium, lower in fat version of my favorite soup to dine out for. Easy to make and leftovers are even tastier the next day! Great along side a salad for lunch or beginning course at dinner.

This is a low carb adaptation. There are no potatoes in this particular recipe due to my low carb lifestyle. It is tasty. You may add sour cream as a garnish.

I love cauliflower soup but I usually add some potatoes and carrots. While I was doing Phase 1 of the South Beach diet, I tried this recipe out and loved it. It would also be good with a little bit of broccoli but I didn't have any on hand.

This version on the original restaurant soup cuts the carb count by 13 grams and saves a little over 50 calories per serving. Trust me you will NOT even miss the potatoes. This version strictly cuts the carbs, but try my "Light" version for a complete overhaul of healthiness without sacrificing the flavor.
