I love this stew! It is so easy and leaves me feeling satisfied. I use 3/4 cup as a serving. If it is too spicy for you, substitute a can of diced tomatoes for one of the diced tomatoes w/chilies.

Good for Side Dish. Lemon Juice gives a little flavour to the couscous, which can be a little bland otherwise. Feta Cheese would be optional for a little more flavour.

Great for large groups or when you want a fresh tasting dinner for one. You can exchange any of the vegetables so this is a good one to clean out your fridge or freezer!

This is an awesome vinaigrette that gives a nice counterpoint to the paprika on the chicken. It could be served with rice, but I served it with the roast vegetables with pineapple recipe on SparkPeople - and that used the rest of the can of pineapple. :-)
