Adapted from a cake recipe in 'Taste Life Organic Recipes'. When made in a cake pan it takes twice and long and is very heavy. Then I made it again in a 10 x 15 cookie sheet, the kind with sides on, It came out perfect! My kids love it this way because they can warm them up in the toaster for breakfast and it freezes well, also. I've done this with other muffin recipes too. Try it!Submitted by SUZYQ2001
