Low Calorie Vegetable Salad

This salad can be adopted in many different ways. You could add a variety of other vegetables or even pasta if you want to make it a pasta salad. I also put this on top of lettuce for an instant salad with little salad dressing but lots of flavor! You could save fat in the recipe if you eliminate the parmesan cheese, but I like it for flavor and texture. Additionally, you could use Ranch or another type of dressing if you like. This makes 10 nice size servings! Yummy!!!

Absolutely delicious! I LOVE this pumpkin butter on toast, especially in my oatmeal in the morning, on yoghurt, or on frozen yoghurt for dessert!

This dressing is my absolute favorite. You can make it with low sodium soy sauce to reduce the sodium if you prefer. It makes 9 tablespoons of dressing. I usually double the receipe. It keeps well for weeks, however, mine doesn't last that long. A little goes a long way on your salad.

Boil all vegetables together for 30 minutes. As the veggies become soft, mash them up to create a thicker soup. Add the chicken bouillon & milk and let the soup boil an additional 10 minutes. I boil my soup longer sometimes to create softer veggies! This is a great recipe with LOW calorie content!
