My mom loves baklava, and this is her recipe - hazelnuts and almonds make a killer combination in the flaky, sticky pastry (my favourite too, since I hate walnuts and pistachios!). I believe she got it from one of her schoolmate's parents when she lived near the Greek area of Toronto. You need a half sheet pan for this, which makes a lot - about 54 3" squares! You can freeze it after the syrup drench, though.

Let's plan a very easy, fun and casual Wine& Cheese Tasting Party!

This is a well rounded plan containing basic information about wines and cheeses, entertaining and building friendships.

Using some great advice from several food and wine experts, I have developed a fun and easy Wine & Cheese Tasting Party plan.

My purpose in writing these party plans is to share my experiences with you and to use expert advice to encourage and motivate you to live, love and enjoy life to it's fullest.

And my hope for you is that you will feel comfortable and knowledgeable enough of wine and cheeses to invite 6-10 friends over for an evening of wine, cheese, conversation and fun.

"Tastings" are fun. Folks sample selections of wine and cheese, write down what they experienced on an index card during the tasting and share their feelings about it.

In a round table discussion, we all compare our answers to questions like, "Was the wine sweet or dry?" "Did the cheese taste smooth, nutty or peppery?" etc...

Our first expert, Marguerite Thomas, the Editor of winereviewonline.com, reminds us that, "Above all, a tasting should be fun."

This is the kind of miracle dish that can convert anyone to tofu. The Jamaican "jerk" seasoning is sure-to-please. It's sort of like barbeque and sort of like curry, savory and sweet at the same time. Just make sure you allow plenty of time for the pressing and marinating. The drier the tofu gets before you put it in the marinade, the better. It will soak up more flavor and be nicely chewy.

Wine Glass Rings

As a Hostess Gift you can give each guest their own decorative little wine glass ring that will help them easily identify their wine glasses.

As a novelty, use some inexpensive clip on or drop ear rings from the Dollar General. Pick out little peace signs, holiday themes, etc...

Actually it really could be anything that you can attach to the stem of the wine glass.

It's just a little something something to give to your guests to chat about and remember the get together with.

Remove the wine rings or ear rings from their packaging and place them on a little tray. Add a few bright colored beads to ear rings to hem look different.

When you set the table, place the tray with the wine glass rings next to the wine glasses.

6. Use individual cutting boards with glass domes.
7. Use glass domes, cake saver covers or clear glass mixing bowls to cover cheese. It really does not matter what you use. Your sole purpose is to protect the cheese and to keep it's fragrance enclosed until it is time to reveal it.
8. Make a card with the name of each cheese & wine pair.
9. Fold in half and place next to it's cheese station.
10. Place a pitcher of water and glasses at the end of the table.

3. Set out the food.

Dinner Table

1. Fill water glasses.
2. Light the candles.
3. Set a bottle of the wine that goes with dinner on the table.

Preparation: Coffee & Dessert

While in the kitchen make sure your coffee service is ready.
1. Set coffee server, sugar bowl and creamer on their tray.
2. Place coffee cups, saucers and spoons on another tray.
3. Set the prepared trays on a counter in the kitchen next to the coffee pot.
4. Brew a fresh pot of coffee after the 3rd wine.
5. Fill the coffee server and bring the tray and the tray of cups to the table along with the dessert.
6. After the 4th or the last wine, serve dessert and coffee.

3.Introduce the first wine.
Fill your glass a fourth full. Set your wine glass on the table and demonstrate a gentle swirl to reveal the wine's color and show them how to sniff the wine.

4. Show them the cheese samples.
Tell them, "Like the wines, you want to notice the color, aromas, textures and how they taste."

Taste two of the wine and cheese pairs before dinner, just like it is a cocktail hour with appetizers.

What if a guests does not like the wine?

Remember: There are no right or wrong answers. People have different tastes.

If a guests does not like the wine, or wants a fresh wine glass, ask for their glass, take it to the kitchen and empty the glass in the sink.

Remove their wine glass ring from the old glass, put it on a new glass and hand them the fresh wine glass.

Note: Serious Tastings have a bucket on the table for people to dump wine into.

"Waste not, want not". Personally, I will not be encouraging wine dumping. Fill the glass about a 4th full at a time. Pour a little less for a guest who states that they do not favor a particular type of wine.

i am superly-duperly impressed with myself! i am becoming quite the "mean,bean,cullinary QUEEN"!!
