Grandma a similiar bread when she made all of her other bread. It was delicious hot of the oven with butter and honey on it. I have made it my own recipe by changing some of the ingredients to healthier ingredents. She used half white and half wheat flour. Mine is 100% Wheat and I prefer to grind my own wheat flour but you can just use whole wheat flour.

Cookbook creator says: I used half whole wheat flour and half white flour, unsweetened applesauce and added 2 tsp. cinnamon. These changes knocked the nutritional info down to cals: 112, fat: 1, protein: 4, carbs: 23, fiber: 2. My kiddos love them!

Cookbook creator says: I used half white flour and half whole wheat flour, plus substituted milled flaxseed for the butter. This knocked the calories down a little a bumped up the fiber. They were great!

I use 1 cup Bread flour to soften the bread - makes a better sandwich. You could use all Whole Wheat if you prefer

Can be prepared as a cake with lemon frosting, I recommend it as a filling as the berries float to the top and make such a pretty topping I don't like to cover it up with frosting. As a cake, loaf or muffins, this is a low fat, lower sugar, higher fibre alternative to traditional lemon-cranberry recipies.
