If you are not used to a lot of fiber, you may not want to start with a whole recipe of this. It is 10 grams of fiber, and one third of that is soluble, which is good for you, but it's a lot at once. This is an assembled "lasagna", with all the lasagna flavors, but created individually in each person's dish, in a fraction of the time. It can also easily be made into spinach lasagna, eggplant lasagna, zucchini lasagna, etc, by putting a vegetable layer in over the meat. If your diet allows, use any kind of whole-grain pasta. I actually think these low-carb pancakes taste better than the old white flour kind, and almond meal is healthier as well. Almond meal (same as almond flour) differs a bit from one batch to the other, so you may have to adjust the amount of liquid to get the thickness you want. I call this "focaccia" because it is baked in that style -- flat on a sheet pan, and then cut up into whatever sized pieces you want. It works for toast, sandwiches, and other bready uses. It is "rough" in texture like heavy whole grain breads. Since it isn't made with wheat, it doesn't have the same kind of grain as wheat breads, but the carb in flax is almost all fiber. This is one of those soups that people tend to love. I often put leftover turkey or chicken in it. It is also good with beans or chick peas, if your diet allows. The idea is that it has vegetables from all the "color groups," so it has lots of antioxidants and other nutrients. If you have any fresh herbs around, feel free to throw them in.
