Only 4 net carbs! Not only that, it's delicious. It doesn't taste like wanna-be pizza, it tastes like actual pizza. And if you don't tell them the crust is made with cauliflower, they'll never guess.

If you are not used to a lot of fiber, you may not want to start with a whole recipe of this. It is 10 grams of fiber, and one third of that is soluble, which is good for you, but it's a lot at once. That said, it's yummy, low-carb, quick to make, and will help see you through the morning!

This side dish can be made with wine or stock, or water, and any herb or herb mixture you like. You can also make it with any color peppers, though I like the look, taste, and nutrition in red peppers.

These muffins are based on Chelsie's Cinnamon Cranberry Flax Muffins. They are sweeter (but not very sweet), and not as intensely spicy.

Walnuts and a touch of cinnamon dress up your everyday tuna salad. It's tastier when the walnuts are toasted, but I don't always take the time.

This is an assembled "lasagna", with all the lasagna flavors, but created individually in each person's dish, in a fraction of the time. It can also easily be made into spinach lasagna, eggplant lasagna, zucchini lasagna, etc, by putting a vegetable layer in over the meat. If your diet allows, use any kind of whole-grain pasta. This recipe is easily adaptable to family members with different tastes and nutritional needs.

I actually think these low-carb pancakes taste better than the old white flour kind, and almond meal is healthier as well. Almond meal (same as almond flour) differs a bit from one batch to the other, so you may have to adjust the amount of liquid to get the thickness you want.

I call this "focaccia" because it is baked in that style -- flat on a sheet pan, and then cut up into whatever sized pieces you want. It works for toast, sandwiches, and other bready uses. It is "rough" in texture like heavy whole grain breads. Since it isn't made with wheat, it doesn't have the same kind of grain as wheat breads, but the carb in flax is almost all fiber. Flax is very useful on a low carb diet, as well as being amazingly good for you.

This is one of those soups that people tend to love. I often put leftover turkey or chicken in it. It is also good with beans or chick peas, if your diet allows. The idea is that it has vegetables from all the "color groups," so it has lots of antioxidants and other nutrients. If you have any fresh herbs around, feel free to throw them in.

Tastes like a margarita! - only sugar free. Tastes oh so much better than the pre-mixed sugar free margaritas on the market. Friends who are not on a diet want one, too.

Great substitute for a sandwich. I roll it with tuna salad and romaine or any kind of deli meat you like.

This is a really low carb approach to pizza. By using a cauliflower pizza crust, you can really cut a ton of calories when compared to a traditional pizza recipe.
