This is an easy to make soup that's filling and tasty, with lots of fiber and protein. The level of spiciness can easily be adapted to your taste by omitting the salsa choosing the heat-level of salsa you prefer and/or using more salsa. I'm a wimp when it comes to spice, and I find that four tbsp of mild salsa give it just a little bit of extra tastiness.

Using a boxed spanish rice mix makes this faster and takes the guess work out of using seasonings, also you don't have to go out and buy any. On top of that, it thickens up the soup a little. Any type of boxed Spanish rice mix will do, just follow the directions and still add the can of tomatoes in the beginning. In this recipe frozen corn holds up better in the soup and stays crisp, you could use fresh or canned if needed though. Another slight change you can make is using turkey instead of chicken, I would use the ground turkey which cooks faster and turns out to be a little sweet in the soup.
