I came up with this simple recipe because my husband loves pancakes, but if he doesn't get some protien in the morning he start to feel light headed before lunch time. He also loves peanut butter, so this was an easy, no-brainer.

Made with soy milk. Use your blender! You can easily halve the recipe, or make the whole thing and freeze some for weekday breakfasts. For a real treat, sprinkle chocolate chips on top of the each pancake just after you put them on the griddle.
