One of my biggest fast-food temptations are greasy fried egg rolls from places like Panda Express. I made over this healthy version using lean chicken and fresh vegetables. Baking the egg rolls instead of frying them saves even more calories and these don't disappoint! They're flavor packed and I can make them often without feeling guilty. Restaurant-style hot and sour soup, minus the sugar, corn starch and MSG. You can add whatever other vegetables you like (hot and sour soup usually has mushrooms but I don't like them). I usually add bean sprouts and brown rice and serve it as a complete meal.

This is the best recipe. We love it. I usually leave out the bacon in the interest of calories and it is fine. Recipe and photo was originally on recipezaar.com by Nimz~. NOte: the sodium content looks really high, but you don't use the seasoning packet in the ramen noodles, so it is actually much lower than stated.
Nutritional information does not include bacon.

Low Fat Version of Chinese Favorite. Recipe modified 2/5/10 to reduce sodium. Found a great teriyaki lower in sodium and eliminated sesame oil. Better taste and better for you!

P.S. I also discoverede that 1 cup of dry brown rice yieds closer to 2 1/2 cups of cooked brown rice.
