This soup is filling and delicious--a perfect starter or light vegetarian meal.
I’m a big fan of tuna salad sandwiches. They’re easy and quick to make, are relatively healthy, and are equally as good as an office lunch or in a picnic basket.
There are three key ingredients at work with this version. First off is the lemon juice and zest…it gives the tuna a light, summery flavor that hits immediately. Second is the toast…if you try it straight from the bowl, it just isn’t as good; you need a warm, dry piece of bread to help the flavors burst in your mouth. Third is the cottage cheese…you don’t taste it at all, but it makes the tuna salad so rich and creamy.Submitted by MDKIMIST
This recipe is a version of my aunt's Thanksgiving corn casserole -- always the favorite. It's tweaked with fresh sweet corn and buttermilk, which makes it a bit sweeter, and impossible to stop going back for seconds! Friends of mine have eaten whole batches alone for a meal!Submitted by RARARACHAEL
In 15 minutes, this easy recipe will take the chill off a cold evening.
This makes about 51/2 quarts. I figure 1 quart per 9" pie cut into 8 pieces to come up with a serving size. I like to pick apples for pie filling before they're quite ripe, since they have better flavor and texture for pie filling. You can use about any kind of apple, but stay away from Red Delicious and Fuji.Submitted by LRUSSELLFAMILY
