Based on a recipe found at thenourishinggourmet.com - I adjusted the cocoa powder and agave to my taste.

This is not a low-fat recipe, but it is awesome for those who are dairy-free and/or prefer a healthier sweetener. You can also make it 100% organic by shopping carefully. Next time I'm going to try it with the reduced fat coconut milk.

This recipe has half the fat and sugar of most Light Pumpkin Ice Creams. It is also loaded with potassium unlike store bought. If you are worried about cholesteral you can substitute cornstarch for the egg yolks.
