A flavor powerhouse of protien!! Cooked with no meat or meat by products. Easy to prepare by putting it all in a crock pot.

Serve with whole wheat tortillas and a home made Pico De Gallo and it is a surefire hit for the whole family.

Also the left overs are really good to mash up the next day with some lime juice and serve with tortilla chips!

I got this recipe from Smitten Kitchen, and oh is it ever good, and ever easy! With only a little bit of prep work, you let the slow cooker do the rest for you!

This is a basic lettuce soup, to use up what's in the garden. I've added beans for protein.
I use the soy sauce because I use a homemade, unsalted broth. If you use premade broth, omit this. Vegetarians - use 6 mushrooms instead of 4, and substitute the chicken broth for water.
