Extremely flavorful, quick, and low sodium way to prepare this (or any other) light fish. Lower sat. fat, calories, and eliminate sodium by replacing butter with olive oil, but sacrifice a little taste.

Original recipe calls for regular breakfast sausage, such as Jimmy Dean. But I found this substitute to taste just as good and much less fat and healthier. A great grab and go breakfast. Make ahead and wrap individually in the refridge, micro for 30 seconds on high and go!!

I spent a month in Italy in 1968 and this recipe came from Ada Boni's Talismano della Felicita, "which is universally recognized in Italy as the standard national cookbook". Despite the weirdness of eating heart, it is a wonderful dish. Heart can often be found in Mexican markets.
