You can lighten this recipe up by using non-fat parm but I love it this way and it still is a reasonable calorie count. The quinoa makes this pilaf extra nutritional. One of my family's favorite sides. Could also be a good main meal by adding cubed chicken breast or just leave vegetarian (use vegetable stock instead of chicken). Sometimes I add a different variety of veggies like green beans.

Thai Cabbage Noodles
Very Good 4.5/5
(12 ratings)

Cabbage is a good source of Vitamins A & c, and fiber. It helps to prevent cancer and is low in calories. Cabbage tastes best and is most nutritious when eaten raw or cooked for a short period of time in a small amount of water.

Cookbook creator says: mostly for the oats/water ratio, since I'm dairy allergic. But I can use almond butter and almond milk instead for richness.

Lentils Puttanesca
Very Good 4.1/5

Puttanesca is one of my favorite Italian sauces. This version turns ordinary dried brown lentils into real comfort food.

Because of research on artificial sweetners, I've modified these to contain real sugar and molasses and other whole foods. They're only TWO CALORIES more! And MUCH healthier.
