I modified recipe submitted by SparkPeople user AJTURLEY77 choice of comfort food. I changed it to fit my family size & dietary preferences. I also don't have Cajun spice on hand, & used what was in my pantry. I served it with recipe for Baked Cheesy Cauliflower. I put the Cauliflower in the oven to bake while I prepared this dish. By making this recipe with dried Great Northern Beans, I was able to decrease the sodium content considerably. I cooked a 16 oz bag of beans per directions. I used 1/3 of the cooked beans for this recipe. The other beans can be stored in the refrigerator and used on salads, or frozen for the next time this recipe is made.
