I tried this recipe from Cooking Light and loved it. Here it is with a few personal modifications of my own.

I use homemade chicken broth that is sodium free. In this recipe I substituted bouillon and I would use half regular and half sodium free because there is no salt required in recipe. This would be good with a little shredded cheese served on top, too.

I used the 1/2 cup rolled oats and ground them to flour in the blender. Splenda, I used 1/3 C. brown sugar/Splenda blend and 1/3 C. regular Splenda. Unusual recipe because there is no fat in it. Made 56 mini muffins.
