These healthful muffins freeze well! Low-fat buttermilk and applesauce help lower the fat in these, and the whole-wheat flour and flax seed add fiber. Submitted by CHEF_MEG Carbs: 33.9g | Fat: 1.5g | Fiber: 2.6g | Protein: 3.6g | Calories: 138.8

These healthy breakfast bars provide a respectable level of protein and fiber without a ton of calories. Best of all, they can be eaten on the run. Reconfigure the "additions" to suit your fancy.... or replace the Splenda with another sweetener if you're trying to stay "au natural." This is a base recipe that can be tweaked to your taste! A super easy mix to put together and store so you can make muffins easily and for very low cost and calories! I make the mix about once a month and then store it in a big #10 can (the size of a large coffee can) with a lid. On top of the lid I put the directions for making the muffins so that even my children can put them together. Make nutty, crunchy granola to have over yogurt or in the morning with milk in place of boxed cereal. Adjust the amount of brown sugar to water (a 3 to 1 ratio) in order to suit your tastes, and use your favorite type of nut or omit them altogether. Sprinkle with fresh or dried fruit to add color and fiber. Submitted by CLARINETCOOK Carbs: 32.7g | Fat: 5.2g | Fiber: 3.9g | Protein: 4.8g | Calories: 182.1
