The Original Recipe comes from Ree at Pioneer Woman. It's high in fat and calories for the flavor, but for me, I wanted something toned done lighter. So I switched some ingredients and kept the flavor while slicing the calories and fat in half. Woohoo!

A rich, delicious, restaurant-style french onion soup. Just remember that both with caramelized onions and with soups it's all about a long, low cooking time to really develop flavors. I first thought this a strange combination when I saw this on the menu on an Alaskan Cruise. The head waiter told me to try it; that I wouldn't be dissapointed. True enough, it was amazing! This is one of my favorite recipes. It is so easy. When you have a few cans of beans and broth and not enough pasta to make a meal for everyone this is the perfect solution. You get fiber and taste! I do suggest using the low sodium varieties of the beans and broth to keep your sodium in check if that is a concern of yours.

This recipe was given to me by my friend's mum-- apparently Chicken and Sweet Corn Soup was my friend's favourite Chinese meal when she was little, so her mum came up with this super quick and easy recipe to cook at home.
