My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry). **Please note: I usually get my bread from a local bakery, so I did not include the bread in the nutrition values. This takes french toast to the next level. A disastrous french toast morning made for my son's friends left me wondering if there was a better way. Needless to say my son never brought his friends for breakfast again. Since then, this french toast casserole is absolutely delicious and loved by all. It is great for days when the kids have off from school and doesn't require any last-minute preparations. Arrange the eggs, milk and flavorings the night before so the flavors have time to soak into the dry bread cubes. Delicious! Wish I would have had this recipe back then!
