All the Enchilada flavor, without nearly as much work. The chicken comes out beautifully when cooked all day in the crock pot, shredding easily and absorbing the chipotle flavor. My mother-in-law gave my husband this recipe to make me for me our first Valentine's Day together. We still make it pretty frequently. It's so simple and even my two preschoolers like it. I've increased the amount of carrots because otherwise my kids eat all the carrots. I usually serve it with some instant rice and a salad.
