Cookbook creator says: Roasted vegies anyone? This is a great basic recipe. Substitute in parsnips, or brussel sprouts, or green beans, or mushrooms, and make your own favorite. Another way to go is to add some fresh spices like thyme or dill.

Cookbook creator says: I make this soup with pears instead of apples and 3 leeks instead of the onion, and I saute three cinnimon sticks along with the leeks, taking them out before blending up the soup. I usually don't add the cream, but I know it is even more heavenly with :)
