Breakfast

I love breakfast. It is truly the most important meal of the day. If I miss breakfast, I have no energy to do the things I needed to that day. Breakfast is wonderful, don't miss it!

Cookbook creator says: I'm thinking I could make them for breakfast one day, then freeze the pancakes I don't eat, pulling them out later for later breakfasts in the week.

"You don't have to stand over the stove and make individual omelets with this recipe. Round out the meal with bread and a simple cherry-tomato salad."

These large muffins are great to start your day. Great taste of carrots with wonderful flavours of apple, raisins, coconut, walnuts and cinnamon. Most of the fat has been taken out and replaced with yogurt and mashed ripe bananas.

Adapted from a recipe seen on 101 Cookbooks, this is a spectacular, powerful boost to your morning whether you serve it warm or chill it down for a midday "pudding". Any berries can be used, I prefer strawberries or blueberries, or a mix!

I almost always bake a double batch of whatever since I don't like using the energy of the oven for just a single batch. I modified a recipe that I had seen to make it a double batch, I also decided to make it a "little healthier" by adding some oatmeal, replacing some of the margarinr with applesauce and using some borwn sugar in place of more processed white sugar. They turned out great, So I thought I'd share!
