This dish serves 1, but can easily be modified to serve more.
Some Soba noodles are gluten-free (check package). They are made from buckwheat and metabolize much more slowly than most carbohydrates, which makes them ideal for diabetics and health-conscious individuals. You can pick them up at your local japanese market or health food store.
If you don't have any chicken leftovers on hand, Marinate chicken breast tenderloins or sliced breasts in some sesame oil, chopped up garlic, sake or rice vinegar, sugar, salt and pepper for 4-24 hours. Cook in nonstick skillet.. adding a bit of soy sauce and sake/wine halfway through the cooking.

My mom was diagnosed with celiac disease about 8 years ago. We have looked everywhere for delicious recipes that substitute other products for gluten. i was fortunate to come upon this wonderful recipe, which uses only 2 unusual ingredients: GF flour and Xanthan Gum. Even though I CAN eat gluten, I still very much enjoy this delicious banana bread. It is best hot from the oven!
It is super moist, bursting with flavor, and you would never know it was GLUTEN FREE :)))
Plus, it is very low in saturated fat and high in polyunsaturated and monounsaturated fat. It is fairly low carb for a banana bread and it also has 1 gram of sugar PER slice....and they are generous servings!Submitted by FITFORLIFE22

This is an altered recipe from the Better Homes and Gardens Cookbook. It uses ready-to-bake/no-boil gluten free rice noodle in the place of normal lasagna noodles and it tastes GREAT! We also recommend the sauce used in this recipe to ensure that it remains gluten-free. The use of weight-watchers cheese, 98% fat free ground beef, and egg beaters lowers the fat and calories considerably.Submitted by BEATLEBANDAIDE
