Great, simple and quick recipe - even my non-low carb friends and family love these! For an extra treat, push a sugar free Reese's peanut butter cup into the top of the cookie instead of flattening it.

I found this recipe in the Kraft food & family Holiday 2009 magazine. The original recipe had 190 calories and 9 grams of fat. I entered this recipe into the recipe calculator to see if I could make it less "fatty" by substituting the cream cheese with fat free cream cheese and the vanilla pudding with sugar free, fat free vanilla pudding. I also substituted the original canned pumpkin for no salt added canned pumpkin. Just an idea for what to do with the pumpkin seeds we cleaned out of our jackolantern. Slightly sweet, slightly salty and crunchy, these are a perfect snack when I'm craving something I shouldn't have

We carved 4 jack-o-lanterns this year so we have a lot of pumpkin seeds. After we scooped them out we rinsed them and put them in water to help rinse off the extra pumpkin guts. I haven't put salt in there because I prefer having options for the flavor of my pumpkin seeds.
