Sweet potatoes are a Thanksgiving staple, but I can't tolerate another year of mushy, sticky, marshmallow covered grease. Those vitamin A delivering darlings deserve better than that! So last year, I converted a family favorite into friendlier fare. And it's vegan to boot. (No, the meat-itarians didn't notice either). How about them apples!?

This salad goes really well with my maple cider dressing (which I entered separately). It's a great fall treat. Use white cheddar cheese, if you can find it, for a really nice flavor!

Whole Wheat Spiced Pumpkin Pancakes
Very Good 4.4/5

These moist pancakes are lightly spiced for the palate of my young child. If you like a bit more pizazz, you can increase the spices or add others. Cinnamon and pumpkin pie spice both work nicely here.

I found a very similar recipe on Spark Recipes, submitted by MECG007. I thought it a great idea but the ingredient list didn't seem to match the recipe so I created this one. The first seemed light on calories and potassium. I am watching potassium levels closely so I made sure I used ingredients from the list that had an entry for potassium. I hope MECG007 doesn't mind. I also used maple syrup and more spice, This recipe also makes more but can be easily adjusted.

Slow Cooker Chicken Taco Stew

I love this stew! It is so easy and leaves me feeling satisfied. I use 3/4 cup as a serving. If it is too spicy for you, substitute a can of diced tomatoes for one of the diced tomatoes w/chilies.

These are a great batch-cook and freeze recipe. I makes about 12 doz meatballs - I store them in gallon ziploc bags in the freezer, and use to dress up spaghetti, cut in half to add to calzones or pizza rolls, make meatball sandwiches..or my favorite..top with my homemade pizza sauce and mozzarella cheese, and eat plain!
I use a serving size of 6 meatballs

Quick and easy way to get your veggies all cooked in a single pan. I use agave instead of honey for less impact on blood sugar. If you don't have broth, use bouillon or water.

I love the bitterness of chard but miss dressing it in olive oil or melted butter. This recipe uses walnuts and bacon to add some depth of flavour and crunchy texture, but it's still nice and healthy.
