This is a sublime dessert that tastes so much like home made peach ice cream at a fraction of the calories and less than half the time. It's an adaptation of the strawberry recipe on the Vitamix website.

Grill Peppers and Onions in Olive Oil.
Season Chicken with salt, pepper, and a hot spice (I used Adobo and Jalapeno). Pour Broth (Carton) in blender add grilled vegetables. Blend for 7-8 Minutes. While blending, cook chicken in onion, pepper pan--use a weight to expedite cooking (or cook chicken ahead of time). Pour broth blend into soup kettle/pan. Season to taste (to spicy or salty. Shred cooked chicken. Add chicken and corn to broth. Simmer. Serve 1 C topped with 1 oz shredded cheese.
