These muffins are loaded with whole grains, fruits, and vegetables! This is a slightly different version of my Healthy Breakfast Muffins. This recipe made 32 regular sized muffins. I make this in a huge 15x10 glass pan, so I have leftovers for lunches, etc. You can cut the amount of everything in half for a smaller size pan. I also use Dreamfield's because of the increased fiber and lower glycemic effect, as my DH is diabetic. Different pasta will have a different count. I sometimes use different cheeses to mix it up a little...use half pepper jack in place of the mozzarella cheese makes it a spicier dish.

This salad is great to make in large batches and use for several meals throughout the week. Served warm or cold, it is delicious.
Some ideas for using this healthy salad include:
-Serve along side a grilled chicken breast, tuna or salmon steak, or lean pork chop, topped with spicy mango salsa.

-add egg whites for a breakfast scramble.

-Serve on a bed of lettuce for a quick, tasty, hearty lunch

-Stuff into pita pocket or wrap & add crunchy romaine or other greens.

-Make a quick tortilla soup by adding a couple cups to low sodium chicken broth, add diced chicken & baked corn tortilla strips.

-freeze in portion size containers for any of these uses.

***when freezing, I don't add avocado to entire batch, add fresh when using.

This is a sugar free version of My mothers famous bean salad. I use Splenda in order to make this sugar free but you could use any sugar substitute of your choice it doesnt have to be Splenda. It is very IMPORTANT to rinse the canned beans very...VERY well this will help reduce the sodium per serving by almost half as the beans are packed in a sodium based slime.....rinse very well and you can divide the soduim per serving by at least half.

I absolutely love this salad! You make it the day before you plan to serve it. It makes a LOT so the calories really don't turn out to be too high considering the ingredients! Can be used year-round but we love it in the spring/summer. This recipe uses light ingredients and you cannot tell a difference. If you want to use full-fat it will not hurt, but will change the nutrition stats!
