This is a traditional Hungarian cookie that my mother's family always makes around Christmas. There are three versions of the cookie usually made, but the base dough is the same. It is a rich, crisp cookie that is very distinctive and little trouble to make, though they do take some time. Freezes well.

Suggestion....next time I make these I will use "Splenda Brown Sugar Blend" to make them sugar free. I will also use all whole wheat flour instead of half and half. If I can find a good baking substitute for the butter, I will try that as well. Surpisingly, these little cookies hit the spot and are quite filling. 2 = serving and 113 calories and 1 weight watcher point. SO sorry to those of you who have viewed this recipe...I didn't know I "shared" it! This was originally the filling for a frozen pie but had a monstorous amount of fat. I decided to make into mini muffin size servings. It's a hit. Still not GREAT for you or a health food but any stretch of the imagination but a great indulgence once or twice a year. I'd love to try this sometime with low fat Cool Whip and see how it stacks up. If you want to live dangerously, pour the entire amount of filling into a chocolate graham cracker crust and freeze.

This is a sugar free version of My mothers famous bean salad. I use Splenda in order to make this sugar free but you could use any sugar substitute of your choice it doesnt have to be Splenda. It is very IMPORTANT to rinse the canned beans very...VERY well this will help reduce the sodium per serving by almost half as the beans are packed in a sodium based slime.....rinse very well and you can divide the soduim per serving by at least half.

I found this recipe on recipezaar.com, but it was a higher fat and calorie version. The original recipe was posted by Tish and it's Baked Sweet Potato recipe #55678 on 'Zaar. Anyway, I had to make some significant substitutions to make the fat and calorie counts more diet friendly. It worked and this turned out fantastic! We served this with lean country style pork ribs and they were amazingly good. I think this would also pair well with Salmon.
