Got this from pg 256 of Vegan Living (complete idiot's guide to) book. But, like any good salad you can make this one your own by tweeking the recipe. All appropriate credit to them but I wanted to add it here for anyone else eating vegan. I hope that's ok. Great for picnics or other occassions where you might normally have egg salad. My first shared recipe. Enjoy.

This is an adaptation of Susan Voisins' recipe at Fat Free Vegan. It is so creamy and tasty you would never pick it for Vegan.

This summer treat gives the benefits of green tea, fruit, and protein, without the sugar and fat of the commercial version. It is a light meal in itself. The flavor can be varied by blending in other kinds of fruit.

This is a wonderfully high protein alternative for vegans and vegetarians. It is very versatile as it can be cooked in casseroles and curries or cut into cutlets and BBQ'd or simply sliced thinly as a sandwich filling.
It's seriously yum!

Unfortunately the canned beans give this recipe a lot of sodium, but it also makes it very quick and easy.
