Cookbook creator says: Very good! I made this using the cake mix, canned pumpkin, 1/4 cup water, and 1-1/2 teaspoon vanilla. I baked at 350 for 30 minutes. I consider this cake rather than brownies and I served this with Cool Whip.

Cookbook creator says: Wonderful ice cream substitute! You can let it freeze hard serve in scoops with a fruit pie or fast-appropriate cake. The texture isn't as smooth as regular hard ice cream, but it works! Plus it is cheaper than all the fancy dairy free ice cream substitutes!

A delicious non-dairy ice cream without the food additives found in commercial ice creams. Unfortunately high in calories. Best to use only a little (perhaps a half serving) to top berries or fruit. This recipe needs to be made over to lower the calories. Use an ice cream maker for this recipe.

Cookbook creator says: Try coconut oil instead of butter! It won't brown like butter, but if you get the extra virgin, it will taste good, AND since it is a medium chain oil, it will help your metabolism work better!
