Recipe Notes: Both cow and coconut milk work well in this recipe. You can also add cinnamon or fruit as desired. Just keep the pancakes small and watch them so they don’t burn. Submitted by SUZKELLEY Carbs: 2.2g | Fat: 1.4g | Fiber: 1g | Protein: 2.1g | Calories: 31.5

My neice uses coconut flour so I decided to try the pancakes. They are really good. Gluten free, soy free, low fat and carb, and sugar free. You can combine coconut flour with regular flours as well. Makes 16-3" pancakes/4 per serving. Submitted by WENDI_WA1 Carbs: 6.9g | Fat: 5.8g | Fiber: 3g | Protein: 3g | Calories: 99.3

My whole family loves these! Although they may seem small (considering the size of muffin we can get in a bakery) but we always add a helping of fruit or yogurt for breakfast. Yummy! Submitted by CHICKLET14580 Carbs: 17.1g | Fat: 0.6g | Fiber: 0.8g | Protein: 1.8g | Calories: 79.5

My mom used to make this delicious version of French toast for breakfast when I was growing up as a great alternative for getting rid of overripe bananas. It makes regular French toast seem bland in comparison! This is excellent topped with a low calorie maple syrup or your favorite yogurt (I like strawberry). **Please note: I usually get my bread from a local bakery, so I did not include the bread in the nutrition values. I do, however, recommend using 100% whole wheat bread as it compliments this recipe wonderfully! Submitted by ZOOBOOZEL Carbs: 4g | Fat: 0.6g | Fiber: 0.5g | Protein: 2.2g | Calories: 29.6
