Combine 3 tablespoons nonfat Greek yogurt; 1/2 teaspoon mustard; 1 teaspoon low-fat mayonnaise; 2 tablespoons chopped celery; 1/2 medium carrot, chopped; 1 tablespoon chopped parsley; and 1 tablespoon chopped chives. Toss with 1 cup chopped cooked chicken. I love this curry chicken salad. I used greek yogurt instead of mayo; i did add one tablespoon of light mayo for taste. Add almonds or walnuts and grapes or cranberries and you have a yummy chicken salad! I served in a half a whole grain pita with lettuce and tomatoes. Very moist and savory chicken with ritz cracker topping and greek yogurt (which you will never taste). Easy to make and eat. Kid friendly, smells really good in your house! Was surprised to see that a lot of ritz cracker chicken recipes add cheese (which I like as well) and do not use light butter or mix the butter with crackers before applying them.
