Cookbook creator says: I am using Zucchini instead of eggplant. I am adding saute'd onion and garlic with Italian herbs. Mix spaghetti with sauce to the added ingredients. Coat and bake separately the Zucchini. Placed on top of the spaghetti mixture, topped with Parmesan cheese and serve.
