This is a really delicious recipe that I've been making for years. Everyone who tries it wants the recipe! You have to spend a little time chopping all the veg, but once you do, you just pop it into the slow cooker and let it go! Husband approved. :)

Please excuse me as this is the first recipe I've posted. The nutritional info is as per the listed ingredients. I couldn't find plain potatoes so I subbed baked potatoes in for the nutritional values. If the nutritional info changes when you bake them make note of that. I wouldn't know. Borscht is so optional as to what you can put into it that the first thing you will be doing is putting other ingredients into it. This soup is filling and high in fiber so it fills you up and sticks with you. Beets are very high in two antioxidants, potassium, and folic acid. Indeed one of the best things about eating borscht is the huge boost in nutrients as can be seen in the nutritional information.

Borscht can be made out of about anything as long as there is beets in it. One thing a lot of people do in Russia is to add all the left over veggies and meat into it as it cooks. You can clean the fridge out. This soups nutrition has been figured with the listed ingredients. Bon Appetito...or....

Authentic Ukrainian Borscht

My boyfriend is Ukrainian and grew up in Kharkiv, where fresh foods and soups - especially Borscht - are staples. And his mom is an amazing cook!
I spent a month and a half in Ukraine and learned a few dishes from her that I am tweaking at home to reproduce the flavor.

Here is my Ukrainian Borscht recipe - it is boyfriend approved.

Serve topped with a dollup of sour cream for an authentic experience! Yum!

My Spicy Old Fashioned Meatloaf

I like things a little on the spicy side so this is my meatloaf. It has tons of onion and a load of flavor! You can cook it topped with additional ketchup or back it like it is. The only reason I made this is so I could figure out the calorie count but thought I might save others the trouble. Enjoy!
