Aiming for High fibre, low calorie, hearty texture & flavour. My soup scoop holds 1/2 cup. 2-3 scoops, plus some fruit and yogurt, is a great lunch.

I created this soup on Nov 12, 2011. I puree the potato to thicken the soup; I puree the spinach and carrot to hide them for my husband (wants the nutrition, doesn't like the textures). Purpose - a low calorie, high protein and fibre lunch food.Submitted by 3BETTYS
High fibre, tasty soup. Takes all day of puttering in the kitchen, but you get over 18 cups of food. I puree all the fresh veg to make a thick broth. If you prefer a different visual or texture, choose to puree a smaller amount.Submitted by 3BETTYS
