This recipe is AMAZING!!! I make these all the time and like them better than any other pancakes Gluten Free or otherwise. If you like coconut and vanilla these are for you! They are delicious on their own with no toppings. For 255 calories you get 12 grams of fiber of the 27 total carbs... and 11 grams of protein.

Saturday Mornings.... PANCAKES. Gluten Free, Grain Free, PALEO... it doesn't get any better than this.
