I adapted this recipe from Cooking Light after my daughter was diagnosed with allergies to gluten, soy and dairy. The original recipe called for 3/4 cup of egg substitute, which I never have on hand.

This recipe is great served with rice and broccoli.

I made this for myself one evening when I really wanted comfort food. Having celiac makes it difficult to eat anything really yummy like mac 'n' cheese. I'm more sensitive to gluten, so the almost dairy-free means that the only dairy it contains is the butter and parmesan cheese. I experimented using a recipe I found on sparkrecipes for flourless mac 'n' cheese and a recipe I found for mac 'n' cheese using corn starch. It's not the most low calorie or low fat recipe here, but it's an excellent substitution for anyone else who is dealing with the gluten free lifestyle.

A recipe I found on the internet at the site: foodloveswriting. It's super tasty, though I did change it a bit leaving out the sugar it called for and halving the oil. Also, I didn't bother with the spices when doing calorie count.
