There is nothing more satisfying than a warm hearty and delicious soup when it's cold outside. This soup is versatile (add whatever veggies you have lying around), easy and nutritious. Adding both barley and lentils makes this more nutritionally complete for the veggies out there, but feel free to just use one or the other if you'd prefer. And the servings are large! If you're having this on the side, you'll get a lot more servings than mentioned! (also it freezes really well too! so make a batch and freeze in single-serve tupperware for easy lunches/dinners!)

A delicious Indian recipe- subtly spicy, with tons of flavor, and vegetarian to boot. This recipe isn't quite quick, but it doesn't take forever, either, and it's a one-pot meal. If you're watching your sodium, choose canned tomatoes that don't have added salt. Adapted from Orangette's recipe here: http://orangette.blogspot.com/2006/02/public-display-of-chickpeas.html

A word of warning- don't skimp on the olive oil. I know it's tempting, but it's a healthy fat and it's absolutely necessary to prevent sticking and to get the correct flavor in the first steps of the recipe.

This is a lovely, dark, meaty tasting dish without the meat!
This serves a crowd, with 9 generous half cup servings.

Try to find "French Green Lentils", as they are the best. I purchase mine at an organic grocery. If you cannot find those, then look for a small, roundish, green to brown lentil. Sometimes these are named just brown lentil. If you look closely however, there will be a greenish cast and these are much smaller and also more round than those you find in the one pound bags at the regular grocery store. These Lentils are so much better than those plain, flat, brown ones that you find everywhere. They take a little longer to cook, but are well worth the patience expended!

Pronounced ma-zhe-dra, this is a vegan Middle Eastern bulgur wheat, lentil and onion pilaf that is incredibly yummy! I first had it at a now (unfortunately) defunct Middle Eastern cafe and the full-blooded Syrian owner told me what the ingredients were, so after they closed and I was craving this dish, I threw together the ingredients in amounts I felt were similar to hers and it turned out pretty authentic tasting! You can also use equal amounts of whole-grain brown rice instead of the bulgur, but I prefer the bulgur wheat. Nutritional info listed is using the bulgur.

This is a slight tweaking of a recipe I found on restaurantwidow.com. I tried to minimize the salt to keep the sodium levels in check. It came out delicious! My 5-yr-old couldn't stop eating them, when I made it for the first time yesterday, and she is already begging me to make it again. They are the perfect snack because they are full of nutrients with hardly any calories; they taste delicious, and have a very satisfying crunch. If you've never tried kohlrabi, you don't know what you're missing!
