You can also skip the egg white in the evaporated milk if you like, it will turn out just as good.

Cookbook creator says: I use a 1lbs pack with 3 breasts, fill them with a little Monterey Jack with Jalapenos, top each with Salsa and a dash of Mexican Cheese and off into the oven.
The chicken is super moist and tasty. I serve it with brown rice that I fry with onions and bell pepper.

I normally scale it down to 2 chicken breasts,no sour cream (the bf hates it) but add a sprinkle of Mexican cheese on top.
I usedthe left over Taco Seasoning in the bag and add it to brown rice and corn to create my very own Mexican Rice
