This is a sugar free version of My mothers famous bean salad. I use Splenda in order to make this sugar free but you could use any sugar substitute of your choice it doesnt have to be Splenda. It is very IMPORTANT to rinse the canned beans very...VERY well this will help reduce the sodium per serving by almost half as the beans are packed in a sodium based slime.....rinse very well and you can divide the soduim per serving by at least half.

My family loves Thai food. I was happy when I found this recipe, because it captures all the authentic flavors of a Thai restaurant. If you want a soup with less fat, it is possible to substitute light coconut milk for one or both cans of regular coconut milk. Fresh lemon grass can be omitted, but the soup will lack some complexity. Don't be tempted to use jarred or dried lemon grass-their flavor is characterless. If you want a spicier soup, add more red curry paste to taste.

I have found these ingredients in my major chain supermarkets, in the International section. Fresh lemongrass is also available at my grocery store.

For a more substantial meal, serve the soup over 2 to 3 cups of cooked jasmine rice. The soup can be prepared through step 1 up to one day ahead of time and refrigerated, but it should be completed immediately before serving, as the chicken and mushrooms can easily overcook.
You can, certainly, substitute shrimp instead of chicken and it will taste delicious.

This is a delicious way to start the day. It's packed with good health, great nutrition and warms you to the core! I use a very clean whey protein, but you can use whatever works for you.

There are many variations on this recipe, but this is a tried and true favorite of mine. Combining the oat bran and oatmeal makes for a wonderful textured porridge. The egg whites make it very creamy, pump up the protein, and don't affect the flavor...just makes it creamy.

Cook's note: I use old-fashioned oats...the instant and packets have too much sugar. I am sure you could use whatever you like - this is a personal choice for me. Also, I make in the microwave, but you can certainly prepare this on the stove or a campfire if you choose.

This soup is so simple, with the main ingredient being only carrots, and no potatoes or cream to thicken it. I'm sure there are many directions in which the flavors could travel, but I prefer to make it with a predominantly Indian taste. Feel free to adjust the spicy-level as necessary. I like it with a moderate to intense heat, but you can add more or less cayenne and crushed red pepper to suit your own taste. The final product should be smooth and evenly blended, so you will need some kind of food processing device to get it right.
