This is my absolute favorite dish from Ruby Tuesday so I had to find a way to make it over. Its called the smokehouse chicken and it is a favorite by many! This delicious dish is high in fat and calories if ordered from the restaurant so I came up with a healthier, guilt free version that has become a favorite in my household!

My favorite dish at a local Mexican restaurant is their Chicken Enchiladas with Creamy Green Chile Sauce. I had to try and find a way to lower the fat and sodium so I could enjoy these without the guilt! I tweaked that recipe a bit to lower the sodium and fat, and came up with a winner! My husband and teen daughter gobble these up!

There is almost no fat in this recipe. Recipe can be doubled to 48-52 shrimp which is enough to feed a crowd! Cooking time is estimated depending on the size of the shrimp. Serve with pineapple or a fruit salsa.

This is a simple recipe that tastes amazing, it is also better than any traditional chicken Parmesan I had tried. When you consider it's lower in fat, takes about 10 minutes to put together, it's no wonder why this is my new favorite recipe.

My family loved this! It's my own low fat version of the chinese dish. I served it over rice and with frozen egg rolls. Kind of high in sugar....but low in fat. Hope you enjoy!
