I like to make Italian chicken sandwiches with this. I split the pieces. Smear them with low- calorie mayonnaise that has balsamic vinegar mixed in. Put on a slab of marinated grilled chicken breast, a slice of fresh mozzarella, and serve with a mixture of chopped tomatoes, fresh garlic and basil, oregano, salt and pepper and just a little olive oil all mixed together. It's wonderful!!

This is the BEST banana bread on the planet. My husband is diabetic and adores this low sugar banana bread (in moderation of course). I also use vegan malt sweetened chips because of his diabetes- Lower carb content than regular chips listed here. I also use a light brown sugar. I don't know if it makes a difference in the sugar/carb content it just doesn't make the bread overly sweet. Also, you can leave in/add to nuts or choc chips as your tastes dictate. You don't even know it's whole grain. I use organic whole wheat flour not the white wheat listed in the recipe. The bread doesn't rise quite as high but is still SUPER yummy.
