These are an oven-baked version of the Italian frico. It's just basically thin rounds of baked cheese. One of the cool things about it is that they are moldable when still warm. If you drape them over an upturned glass, they will form a cup that you can fill with anything you like. It makes a really nice presentation for a party. "I call this "focaccia" because it is baked in that style -- flat on a sheet pan, and then cut up into whatever sized pieces you want. It works for toast, sandwiches, and other bready uses. Enhanced Oopsie Roll recipe made with peanut butter for a dairy free version ( instead of cream cheese). I would say it is way better than the original Oopsie Roll because it has more structure to it and is very bread- like. It is best served of course with some jelly or your other favorite toppings.
