This recipe is so easy. The roast falls off the bone and is so tender. Served with steamed veggies, it makes as excellent entree for dinner. It also is very good to freeze. Use leftover rice or pre-cook the rice and allow to cool. I also tend to use left over pork or pre-cook the pork before making the fried rice, allowing it to cool.
