My vegetarian ( or vegan) version of Jambalaya. I'm easy on the heat but you can add more cayenne pepper and some Tabasco to taste. If you want the recipe more soup-like, you will probably want to add more water.

This is one of those things that errupted from having nothing else in the cupboard or fridge! It worked out great. SUBSTITUTE QUINOA for RICE, white or brown and SUBSTITUTE TOFU for chicken or your favorite meat substitute. Just as yummy! Great served with slivers of avocado and a fresh cilantro!

*Not included in nutritional info* Place prepped ingredients and cheese on top of crisp tortilla and broil until cheese melts, about 5 minutes. I brushed corn tortillas with olive oil infused with fresh cilantro and lime juice (put all three in a pan and heated up) then baked tortillas about 20 minutes or until crisp. I am eating the leftovers for lunch without the tortillas, just with a spoon. This can also top nachos or be served a dip with chips. My 1 year old LOVES it since it's so baby hand friendly and SO TASTY and healthy!

If I weren't sparking, I'd be scooping this up with tortilla chips! This would also be great in a wrap. Right now, I'm eating it with a fork and it is fantastic!

Makes 4 huge servings at this calorie level. 6 smaller servings would lighten the calories.
